This unit describes the skills and knowledge required to comply with personal hygiene, maintain food safety, contribute to cleanliness of food handling areas and dispose of food.

This unit applies to food services workers who work under supervision and within defined guidelines.

Learners will gain several benefits from completing this course:

  • learn how to comply with personal hygiene standards as required by the food safety program
  • contribute to the cleanliness of food handling areas according to the food safety program
  • follow the food safety program.

Upon successful completion, learners will be able to:

  • follow personal hygiene procedures
  • follow hand washing procedures and use required facilities
  • maintain the workplace in a clean and tidy order to meet workplace requirements
  • comply with workplace measures to prevent pests entering food premises
  • identify and report indicators of pest presence
  • handle and store food according to the food safety program
  • store, use and dispose of single use items appropriately to avoid damage and contamination.

On successful completion of the course, learners can pursue roles such as food services workers who work under supervision and within defined guidelines.

  • age: 15 or older
  • able to attend classes at the designated times
  • able to complete learning and assessment tasks to a satisfactory level, with support where required.

Learners must have the necessary language, literacy and numeracy skills to interpret and apply relevant information to commence learning in this program. Learners will be required to undergo a pre-enrolment assessment to determine their Language, Literacy and Numeracy (LLN) capability. This test aligns with the Australian Core Skills Framework (ACSF) which describes the outcomes of foundational skills relevant to the level of this program. The outcomes of this assessment will indicate whether a learner is suitable for the course or whether they require additional educational and support services, reasonable adjustment or referral to other training or services.

Knowledge acquired will be assessed through a combination of Knowledge Questions and Performance Tasks such as hand-washing procedures, cleaning and tidying, and any other assessment method deemed appropriate by the College.

There is some pre-reading involved in this unit, but assessment is conducted and completed on the day.

Upon successful completion, learners will receive a nationally accredited Statement of Attainment in the following unit:

Not applicable as this is a preparatory course.
