The Food Safety course (skillset) is valid for all industry sectors including Hospitality, Retail, Health & Community, Food Processing and Transport and Distribution industries.

Ideal training for all people who work with food, including employees, community volunteers, students and parents of sporting groups and canteens. This course will equip learners in hygienic practices and handling food safely during the storage, preparation, display, service, and disposal of food. This skillset includes two accredited units of competency.

SITXFSA006 – Participate in safe food handling practices

Food handlers who directly handle food or food contact surfaces such as cutlery, plates and bowls during their daily work activities. This includes:

  • cooks, chefs, caterers, kitchen stewards, kitchen hands
  • bar, and food and beverage attendants
  • room attendants and front office staff
  • food handlers who require the Food Safety Supervisor certificate.

Learners will gain several benefits from completing this course:

  • follow hygiene procedures to avoid food-borne illnesses to customers
  • prepare, display, serve and store food safely
  • appreciate why it is important to report personal health issues
  • prepare food correctly for allergen requests by customers
  • recognise, and comply with, mandatory WHS laws and food safety programs.

Upon successful completion, learners will be able to:

  • identify food hazards and report unsafe practices
  • prevent food contamination and cross contamination
  • follow the hand washing procedures of the organisation
  • maintain a clean environment and all equipment
  • dispose of food safely and document such disposal.

On completion of this skillset, learners can apply for roles such as:

  • food supervisor
  • kitchen manager
  • cafe or restaurant supervisor
  • food handling compliance officer.

Units of Competency 

SITXFSA005 – Use hygienic practices for food safety

This unit describes the performance outcomes, skills and knowledge required to use personal hygiene practices to prevent contamination of food that might cause food-borne illnesses. It requires the ability to follow predetermined organisational procedures and to identify and control food hazards.

The unit applies to all organisations with permanent or temporary kitchen premises or smaller food preparation or bar areas.

This includes restaurants, cafes, clubs, hotels, and bars; tour operators; attractions; function, event, exhibition and conference catering; educational institutions; aged care facilities; correctional centres; hospitals; defence forces; cafeterias, kiosks, canteens and fast food outlets; residential catering; in-flight and other transport catering.

It applies to food handlers who directly handle food or food contact surfaces such as cutlery, plates and bowls during their daily work activities. This includes cooks, chefs, caterers, kitchen stewards, kitchen hands, bar, and food and beverage attendants, and sometimes room attendants and front office staff.

Food handlers must comply with the requirements contained within the Australia New Zealand Food Standards Code.

In some States and Territories businesses are required to designate a food safety supervisor who is required to be certified as competent in this unit through a registered training organisation.

SITXFSA006 – Participate in safe food handling practices

This unit describes the performance outcomes, skills and knowledge required to handle food safely during the storage, preparation, display, service and disposal of food. It requires the ability to follow predetermined procedures as outlined in a food safety program.

The unit applies to all organisations with permanent or temporary kitchen premises or smaller food preparation areas. This includes restaurants, cafes, clubs, and hotels; tour operators; attractions; function, event, exhibition and conference catering; educational institutions; aged care facilities; correctional centres; hospitals; defence forces; cafeterias, kiosks, canteens and fast food outlets; residential catering; in-flight and other transport catering.

Safe food handling practices are based on an organisation’s individual food safety program. The program would normally be based on the hazard analysis and critical control points (HACCP) method, but this unit can apply to other food safety systems.

It applies to food handlers who directly handle food during their daily work activities. This includes cooks, chefs, caterers, kitchen hands and food and beverage attendants.

Food handlers must comply with the requirements contained within the Australia New Zealand Food Standards Code.

In some States and Territories businesses are required to designate a food safety supervisor who is required to be certified as competent in this unit through a registered training organisation.

  • age: 16 or older
  • able to attend classes at the designated times and have the basic physical fitness to work in a food handling environment.
  • able to complete learning and assessment tasks to a satisfactory level, with support where required.

Learners must have the necessary language, literacy and numeracy skills to interpret and apply relevant information to commence learning in this program. Learners will be required to undergo a pre-enrolment assessment to determine their Language, Literacy and Numeracy (LLN) capability. This test aligns with the Australian Core Skills Framework (ACSF) which describes the outcomes of foundational skills relevant to the level of this program. The outcomes of this assessment will indicate whether a learner is suitable for the course or whether they require additional educational and support services, reasonable adjustment or referral to other training or services.

Knowledge acquired will be assessed through a combination of Knowledge Questions and Performance Tasks such as role plays, written tasks, observation by the assessor, and any other assessment method deemed appropriate by the College.

Upon successful completion, learners will receive a nationally accredited Statement of Attainment in Food Safety Supervision incorporating the following units:

SITXFSA006 – Participate in safe food handling practices

Upon successful completion, participants will be issued with a NSW Food Safety Supervisor Certificate valid for 5 years from the date of issue.

Not applicable as this is a preparatory course.
