The course covers responsible service of alcohol and gambling, along with core food safety and hygiene practices. This course is ideal for individuals seeking entry-level roles in hospitality, including hotels, restaurants, cafes, bars, clubs, casinos, hospitals, aged care, events, and transport catering. It suits staff involved in food handling, alcohol service, or gambling operations, such as cooks, chefs, kitchen hands, bar attendants, servers, and gaming personnel.

SITHFAB021 Provide responsible service of alcohol

This unit covers the skills and knowledge required to responsibly sell, serve, or supply alcohol in any licensed venue, including hospitality outlets, packaged liquor stores, wineries, breweries, and distilleries. It applies to all staff involved in alcohol service, including attendants, salespersons, cellar door staff, delivery personnel, security staff, and licensees. The unit addresses state and territory liquor laws and core RSA (Responsible Service of Alcohol) requirements. Certification rules may vary, and some jurisdictions may require additional bridging courses. No specific licensing, legislative, or certification requirements apply to this unit at the time of publication.

SITHGAM022 – Provide responsible gambling services

This unit applies to all hospitality personnel involved in wagering (racing and sport) and gaming (machines, table games, Keno, and lotteries) in venues such as hotels, clubs, pubs, casinos, and TAB outlets, including licensees, gaming supervisors, managers, and frontline staff working under supervision. It provides the skills and knowledge to deliver responsible gambling services and support customers at risk of harm, ensuring staff operate within organisational procedures, regulatory requirements, and industry codes of conduct.

Certification requirements vary across states and territories and may be referred to as Responsible Conduct of Gambling (RCG), Responsible Service of Gaming, or Responsible Service of Gambling (RSG).

SITXFSA005 Use hygienic practices for food safety

This unit covers how food handlers maintain personal hygiene, prevent contamination, and control food hazards. It applies to kitchens, cafes, bars, restaurants, hospitals, aged care, events, and transport catering. Food handlers must follow the Australia New Zealand Food Standards Code, and some regions require a certified food safety supervisor.

SITXFSA006 Participate in safe food handling practices

This unit covers safe food handling during storage, preparation, display, service, and disposal. It applies to food handlers in kitchens, cafes, bars, restaurants, hospitals, aged care, events, transport catering, and similar settings. Practices follow an organisation’s food safety program, usually based on HACCP. Food handlers—including cooks, chefs, kitchen staff, and beverage attendants—must comply with the Australia New Zealand Food Standards Code. Some regions require a certified food safety supervisor, and local authorities should be consulted for legislative and accreditation requirements.

  • able to complete learning and assessment tasks to a satisfactory level, with support where required.

Learners must have the necessary language, literacy and numeracy skills to interpret and apply relevant information to commence learning in this program. Learners will be required to undergo a pre-enrolment assessment to determine their Language, Literacy and Numeracy (LLN) capability. This test aligns with the Australian Core Skills Framework (ACSF) which describes the outcomes of foundational skills relevant to the level of this program. The outcomes of this assessment will indicate whether a learner is suitable for the course or whether they require additional educational and support services, reasonable adjustment or referral to other training or services.

Knowledge acquired will be assessed through a combination of Knowledge Questions and Performance Tasks such as role plays, written tasks, observation by the assessor, and any other assessment method deemed appropriate by the College.

This skillset may be fully funded by the NSW Government subject to set criteria to assess the learner’s eligibility.
